As a part of the graduation curriculum, this activity was planned to provide the hands on training on Institutional Food Management. BSc IVth semester Nutrition and Dietetics students under the guidance of faculty members Ms. Ankita Sharma and Ms. Vandana Garg planned and prepared for this cafeteria.
The inauguration of the cafeteria was done by Dr M K Soni, PVC, MRIIRS; Dr. D C Chaudhary, Advisor, Faridabad Navchetna Trust and Dr Sarita Sachdeva, Dean Research, MRIIRS.
The students prepared nutritious recipes incorporating oil seeds (sunflower, pumpkin, muskmelon, flax and chia) like beetroot or spinach base Pizza Delight, sprouted moong dal Canopy, Nachos Salad, Pao-bhaji, Beetroot or Spinach based Appe, Mint lemon Mojito, Aam Panna, and Fruit Custard. Oil seeds are rich in protein and high quality fat such as omega-3 and omega-6. Under this activity, students independently managed each stage of production and service viz food costing, raw material procurement, bulk food preparation, cafeteria decoration and serving food to customers. Some of the attraction points at cafeteria were selfie booth with props, light music and nutritious food at reasonable price.
The departments and students had enjoyed it very much!!
